Fish Boil - 6Qt. Roaster

1½ Tbsp lemon juice
1 bay leaf
1/3 cup dry white wine
4 whole peppercorns
2 whole Aalspice
dash salt
1 lb pkg frozen fish
2 to 3 cups Water [enough to cover fish]
6 small potatoes
6 small onions
1 cup frozen peas

Cheese Sauce
1 cup Poaching Liquid[see directions below]
2 Tbsp butter
2 Tbsp flour

1/4 cup milk
1/4 tsp dry mustard
2/3 cup Swiss or Cheddar Cheese, grated
dash nutmeg

Put all ingredients, except peas, into Nesco® Roaster Oven.
Heat at 425ºF until mixture comes to boil [about 15 minutes].

Reduce heat to 350ºF and boil 30 minutes. Add peas and simmer about
5 more minutes. Remove fish and vegetables to warm platter and set aside in
warm place OR you may serve it at this point.

To Prepare Cheese Sauce:
Pour poaching liquid from roaster into saucepan and cook on top of range
until liquid is reduced to about 1 cup. Strain into a measuring cup and set
aside. In same saucepan, melt butter and add flour, stirring constantly until
