|Peanut-Chicken Skewers - Jet Stream Oven
|6 boneless, skinless chicken breast halves
1/4 cup crunchy peanut butter
1/3 cup chopped cilantro
1/2 cup bottled chili sauce
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/4 cup lemon juice
1/4 cup firmly packed brown sugar
1/4 cup low-sodium soy sauce
8 green onions, minced
2 Tbsp minced garlic
2 red or green bell peppers, cut into 1/2" pieces
24 8" bamboo skewers
Slice each breast half lengthwise into 4 strips, set aside.
In bowl, combine peanut butter, cilantro, chili sauce, cayenne, black pepper, lemon juice, sugar, soy sauce, green onion, and garlic. Add chicken strips, cover, and marinate overnight or up to 2 days.
Soak bamboo skewers in water for 30 minutes; drain. Thread chicken strips onto skewers, with pepper cubes interspersed.
Place skewers on rack in preheated Nesco®/American Harvest® Jet Stream Oven® at 400ºF on HIGH fan speed for 3-5 minutes.
To serve, garnish with minced parsley.
