Spicy Chicken & Sausage Gumbo for 6Qt. Roaster Oven

1 lb mild Italian sausage links, cut into 1/4" pieces
1 lb boneless, skinless chicken breasts, cubed
3 Tbsp Canola Oil
1 med sweet red pepper, seeded & chopped
1 med onion, chopped
4 celery ribs, chopped
1 tsp dried marjoram
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp cayenne pepper
4 cans chicken broth (14½ oz each)
2/3 cup uncooked white rice
2 cups chunky salsa
1 lb uncooked med. shrimp, peeled & deveined
2 cups okra

Pre-heat your Nesco® 6 Qt. Roaster Oven to 425ºF. In the cook well, brown sausage & chicken in the canola oil.

Remove chicken & sausage with a slotted spoon. Cook red pepper, onion, & celery in the remaining drippings from meat until tender. Stir in the seasonings & cook for 5 minutes.

Add broth, rice, and sausage/chicken mixture. Cook for about 20-25 minutes, stirring often.

Reduce heat to approximately 200ºF and simmer for about 20-25 minutes OR until rice tender.

Stir in salsa, shrimp & okra, cook for about 10 minutes OR until shrimp turn pink, stir occasionally.
