Cajun Red Beans & Rice - 12Qt. Roaster

1 lb dry red kidney beans
water to cover beans plus 2" over
1 tsp cayenne pepper
1 clove garlic, minced
1 Tbsp onion, minced
1/4 tsp marjoram
1/2 tsp paprika
4 tsp chili powder
1½ tsp cajun seasoning
1/4 tsp oregano
salt and ground black pepper to taste

Combine above ingredients in Nesco® Roaster Oven. Cover, soak

3 cups water

16 oz stewed tomatoes with chili peppers
3 Tbsp beef bouillon granules
1 Tbsp brown sugar
1 Tbsp Worcestershire Sauce
2 tsp tabasco sauce
2 whole bay leaves, removed before serving
1 stalk celery, thinly sliced
1/2 green pepper, seeded, chopped
1 lb German or Italian sausage, cut into pieces
hot cooked rice to serve

Drain off soaking water. Add the first 7 ingredients. Cover. cook in
your Nesco® Roster Oven 4 to 5 hours, adding water to cover beans,
if needed.

Increase temperature to 325º F. Add remaining ingredients; stir.

Cover; cook 2 to 2½ hours or until thickened.

Serves 6 to 8
