|Chicken & Mushrooms - 4, 5 or 6Qt. Roaster
|4 (6 oz each) chicken breasts, boneless
1/4 cup butter or margarine, melted
1½ tsp browning sauce
1 tsp paprika
1 tsp ground sage
1/2 tsp lemon pepper
1 lb whole large mushrooms, cleaned
1/4 cup apricot preserves, warmed
Preheat Nesco® Roaster Oven to 375º F.
Rinse chicken; pat dry. Combine butter and browning sauce in small bowl; brush evenly over skin of chicken pieces. Sprinkle paprika, sage and lemon pepper over pieces. Combine mushrooms and preserves in small bowl; stir to coat.
Arrange pieces on rack in preheated oven; add mushrooms. Cover and roast 35 to 40 minutes or until internal temperature reaches 170ºF on meat thermometer.
Baste chicken with pan drippings before serving with mushrooms.
