Peach Maple Tart - 12 or 18Qt. Roaster

1 (8") pie crust, unbaked
2 eggs
1/2 cup granulated sugar
1/3 cup all-purpose flour
1/2 tsp lemon peel, grated
1 cup plus 2 Tbsp heavy cream
2 Tbsp maple syrup
1 tsp vanilla extract
4 peaches, skinned, cut into quarters

Preheat Nesco® Roaster Oven to 400º F.

Arrange pie crust in 8" round baking dish. Place dish on rack. Set rack
in preheated cookwell. Cover; bake 10 minutes.

mixing bowl until light and frothy. Gradually beat in sugar, flour and lemon
peel. Pour in cream, maple syrup and vanilla.

Remove rack with partially baked crust from cookwell and set on heatproof
surface. Arrange peach sections on pastry. Pour cream mixture over peaches. Set
rack in cookwell. Cover; bake 55 to 60 minutes or until set.
