|Spinach Quiche - 4, 5 or 6Qt. Roaster
|9" pastry crust, unbaked
10 oz pkg frozen chopped spinach, thawed, squeezed dry
1/4 lb Italian sausage, cooked (optional)
8 oz can sliced mushrooms, drained
1 small onion, diced
2 cups Ricotta Cheese
1 cup (4oz) shredded Swiss Cheese
1/4 tsp dry mustard
1/2 tsp Italian herb seasoning
salt and pepper to taste
1/3 cup grated Parmesan Cheese
Remove cookwell. Preheat Nesco Roaster Oven to 350º F.
Roll pastry crust into rectangle slightly larger than cookwell. Lightly wipe cookwell with cooking oil. Place crust into bottom of cookwell. Set cookwell into preheaterd heatwell. Cover; bake 10 minutes.
Remove cookwell and set on heat-resistant surface. Layer spinach, sausage, mushrooms, onions and Swiss Cheese over crust. Combine Ricotta Cheese, eggs and seasonings; stir to blend. Pour over Swiss Cheese. Top with Parmesan Cheese.
Set cookwell into heatwell. Cover; bake 40-50 minutes or until set. Let quiche stand 5 minutes before serving.
