1/2 cup brown sugar, packed
1/4 cup butter or margarine
1 large egg
1 large banana, mashed
1/4 cup sour cream
1/2 tsp vanilla extract
1½ cups all-purpose flour
1 tsp grated lemon peel
1/3 cup golden raisins
1/2 cup chopped citron fruit
1/2 cup chopped almonds
Preheat Nesco® Roaster Oven to 325º F.
Combine sugar and butter in large mixing bowl; beat until light and
fluffy. Beat in egg, banana, sour cream and vanilla. Stir in flour and lemon

peel. Add raisins, citron and almonds; stir just until mixed. Pour into
lightly greased 8" tube pan.
Set pan on rack in preheated cookwell. Cover and bake 55 to 65 minutes or
until wooden pick inserted in center comes out clean.
Cool on cooling rack. Store in air-tight container.
