|Mediterranean Chicken - Jet Stream Oven
|Oil for greasing pan
3 lb roasting chicken
2 large cloves garlic
1 Tbsp olive oil
1 Tbsp minced fresh tarragon
1 tsp crushed sage
6 Tbsp balsamic vinegar
12 small new potatoes
Remove skin from chicken. Peel and halve garlic cloves, rub surface of chicken with cut garlic and place cloves inside chicken.
Mix together olive oil, tarragon, sage and vinegar.
Assemble Nesco®/American Harvest® Jet Stream Oven® with one Expander Ring.
Place whole chicken on inverted rack in preheated oven. Pour olive oil mixture over surface of chicken and inside cavity. Place potatoes on rack around chicken. Bake at 400º F on HIGH fan speed for 30-35 minutes.
