Lumberjack Beans - 6, 12 or 18Qt. Roaster

1/2 lb bacon or salt pork, finely minced
3 lbs ground beef
3 cups onions, finely chopped
1 cup Celery, finely chopped
2/3 cup beef broth
2 cans (1 lb 12 oz ) baked beans, molasses style
1½ garlic clove, minced
1½ cups ketsup
3 Tbsp prepared mustard
1½ tsp salt
1/2 tsp pepper

Preheat Nesco® Roaster Oven to 400º F.

Brown bacon or salt pork, stirring frequently. Drain on paper toweling
and set aside. Drain excess fat from pan. Put beef in cookwell. Stir

occasionally to brown, cover when not stirring. Add onions and celery and continue to
stir until meat is brown and onion is tender. Add broth and beans. Mix
garlic, catsup, mustard, salt and pepper together. Pour over entire mixture,
stirring to combine all ingredients.

Reduce heat to 350º F and continue to cook for 1½ hours. About
20 minutes before serving, sprinkle minced bacon or salt pork over top.

To Slow Cook:
Follow above directions until all ingredients are mixed together. Then
reduce heat to 200º F for 4½ to 5 hours.

Serves 12 to 15 one-cup servings
