|Venison Loin Backstraps - 4, 5 or 6Qt. Roaster
|1 lb venison loin backstraps
1/2 lb bacon
Split open backstraps and let rest
1/2 lb of scallops
1/2 cup of Ritz Crackers, crushed
Stuff backstrap with above mixture. Fold over, lay bacon strips on top of meat. Wrap in aluminum foil.
Place in cookwell of preheated Nesco® Roaster Oven. Bake at 350º F, 25-35 minutes.
