Peanut Butter & Peanuts Cookies - 12 or 18Qt. Roaster

1½ cup chunky peanut butter
1/2 cup margarine
1½ cups brown sugar, packed
2 eggs
1 tsp vanilla extract
2 cups plus 2 Tbsp all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 cup dry roasted peanuts
1 cup chocolate chips

Preheat Nesco® Roaster Oven to 375º F.

In large mixing bowl, with your Nesco® Hand Blender cream
peanut butter and margarine. Add brown sugar; beat until smooth. Beat in eggs
and vanilla extract. Add dry ingredients; stir until blended. Mix in peanuts

and chips.

Drop by spoonfuls 2" apart on lightly greased 14 x 8½" baking sheet.
Place baking sheet on rack. Set rack in preheated cookwell. Cover; bake
10 to 12 minutes.

Remove cookies from baking sheet to cooling rack. Repeat until all
cookies are baked. Store in airtight container.
