|Peach Meringue Cups - Jet Stream
|6 sponge cake cups (often called shortcake cups)
6 Tbsp maraschino cherry juice
6 canned peach halves, drained
2 egg whites
2 Tbsp sugar
2 Tbsp maraschino cherries, chopped
6 maraschino cherries, whole
Preheat NESCO®/American Harvest® Jet-Stream Oven® at 400º F at HIGH fan speed for 2 minutes.
Sprinkle each cake cup with one tablespoon maraschino cherry juice. Place peach half in each cup, cut side up. With your Nesco®/American Harvest® Hand Blender beat egg whites until thick; gradually add sugar and beat until stiff peaks form.
Fold chopped cherries into meringue. Spoon meringue onto peaches, spreading to cover completely. Place on inverted rack and bake at 400º F on LOW fan speed for 2 to 3 minutes or until lightly browned. Remove and top each with a whole cherry.
