|Chicken Pasta Salad - Jet Stream Oven
|2/3 cup nonfat yogurt, plain
2 Tbsp parsley, chopped
1 Tbsp onion, grated
1 Tbsp garlic, minced
1 Tbsp fresh lemon juice
1/8 tsp black pepper
3 chicken breast fillets, boneless, skinless
1 tsp olive oil
3 cups pasta shells, cooked
1 rib celery, sliced
1 small carrot, peeled and shredded
1/2 cup peas
1/4 cup red and green bell peppers, minced
2 Tbsp fresh basil, chopped
2 Tbsp Parmesan® Cheese
Combine dressing ingredients and chill while grilling chicken.
Preheat NESCO®/American Harvest® Jet Stream Oven® for 2 minutes at 400ºF with fan on high.
Brush fillets with olive oil and grill on rack at 400º F 8 to 10 minutes with HIGH fan speed.
To serve, cut chicken in chunks and combine with cooked pasta, vegetables and dressing. Serve at room temperature or chilled.
