|Chicken Breast with Green Peppercorn Sauce - Jet Stream Oven
|2 tsp safflower oil, divided
1/2 cup chicken stock
2 Tbsp minced onion
2 tsp flour
1 Tbsp green peppercorns
1/4 tsp dried tarragon
1/2 cup milk
4 boneless, skinless chicken half breasts
Combine all ingredients (except chicken) in jar with tight-fitting lid. Shake well to mix thoroughly. Pour into small saucepan and cook over low heat. Stir until mixture thickens. Set sauce aside and keep warm.
Place chicken breasts on rack in preheated Nesco®/American Harvest® Jet Stream Oven®. Brush chicken with 1 tsp oil and broil at 400º F on HIGH fan speed for 8-10 minutes or until done.
Serve warm sauce over chicken.
