Raspberry Whole Chicken - 4, 5 or 6Qt. Roaster www.nesco.com

4 to 5 Lb whole chicken
1/2 cup raspberry preserves
1 Tbsp butter or margarine
1 tsp browning sauce
1 Tbsp orange peel
1 tsp marjoram
1/4 tsp sage

Preheat Nesco® Roaster Oven to 425ºF.

Rinse chicken; pat dry. Combine preserves, butter, browning sauce, orange
peel marjoram and sage in small saucepan. Warm over medium heat. Brush over
chicken.

Place chicken on rack in preheated cookwell. Cover and roast 60 to 70
minutes or until internal temperature reaches 180ºF. (dark meat of thigh) on

meat thermometer. Baste chicken with pan juices before slicing.
