Sugar Cookies - 12 or 18Qt. Roaster

1 cup margarine
1 cup powdered sugar
1 egg
1 tsp Vanilla Extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp cream of tartar
granulated sugar to coat dough

Remove rack from cookwell.

Preheat Nesco® Roaster Oven to 375ºF.

In large mixing bowl, cream margarine and sugar. Beat in egg and vanilla.
Add dry ingredients; stir until smooth.

Form dough into 1" balls; roll balls in granulated sugar. Place 2" apart
on lightly greased baking sheet. Set sheet on rack. Put rack in preheated
cookwell. Cover; bake 10 to 12 minutes.

Remove from baking sheet to cooling rack. Repeat until all cookies are
baked. Store in airtight container.

Option: English Toffee Cookies
Use recipe above and stir in 14 crushed, bite-size English Toffee Candy
Bars. Garnish with a pecan half on each ball of cookie dough.

Makes approximately 4 dozen
