Lamb Chops with Fruit Salsa - 12 or 18Qt. Roaster

8 (3 to 4 oz each) lamb rib chops
1 cup orange juice
2 Tbsp vegetable oil
1/4 cup brown sugar, packed
1/4 tsp lemon pepper

Preheat Nesco® Roaster Oven to 425º F.

Place chops in shallow dish. Combine remaining ingredients in small bowl;
stir to blend. Pour over chops. Cover; refrigerate 30 minutes.

Place chops on inverted rack; discard marinade. Set rack in preheated
cookwell. Cover; roast 20 to 25 minutes or until internal temperature reaches
165º F on meat thermometer. Serve with Fruit Salsa.

Fruit Salsa

Lamb Chops with Fruit Salsa - 12 or 18Qt. Roaster

1 cup golden raisins
1 large orange, peeled, chopped
1/2 cup chopped pecans
1/3 cup orange marmalade
1/2 tsp pumpkin pie spice

Combine all ingredients in small saucepan. Cook over medium heat 5
minutes or until mixture comes to a boil, stirring constantly. Serve warm or
transfer to a container; cover and refrigerate until chilled.

Variation: 1 cup dried cranberries or cherries may be substituted for
