CAKE:
4 eggs
1 3/4 c sugar
1 c oil
1 (16 oz) can pumpkin
2 c flour
1/2 tsp salt
1/2 tsp ground ginger
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder

FROSTING:
8oz cream cheese
1/2 c butter
1 tsp vanilla

3 c powdered sugar
1/2 cup chopped pecans (optional)

Frosting Directions:
Combine ingredients, mix well.
Makes enough for 2 layer cake



Pre-heat Nesco® Roaster to 350 F

In a large bowl mix eggs, sugar and oil with your Nesco® Hand
Blender
. Sift , flour, salt, ground ginger, cinnamon, baking soda, and
baking powder into a separate bowl. Add dry ingredients into oil mixture,
beating well. Stir in pumpkin puree. Pour batter into two greased and floured
Nesco®: 9-inch round cake pans.

Bake at 350 F for 35-40 minutes
