|Walnut Meringue Cake - 12 or 18Qt. Roaster
|3 eggs, separated
3/4 cup granulated sugar
1/2 tsp cream of tartar
1/2 cup margarine
1/2 cup lemonade
1 tsp vanilla extract
1½ cups all-purpose flour
2 tsp baking powder
1/2 Tbsp lemon peel, grated
1 tsp cinnamon
1/2 cup walnuts, chopped
Preheat Nesco® Roaster Oven to 400º F.
Beat egg whites in large mixing bowl until stiff. Gradually beat in 1/4 cup sugar and cream of tartar. Set aside.
Cream margarine and remaining sugar. Add lemonade and beat until blended. Stir in remaining ingredients. Gently fold in egg whites. Spoon into lightly greased Nesco® 9in Pie Pan .
Place pan pan on rack. Set rack in preheated cookwell. Cover; bake 10 minutes. Reduce temperature to 375º F, bake 25 to 30 minutes or until set.
Remove from cookwell and cool on cooling rack. When cool, store in an airtight container.
