Mahi-Mahi with Lemon and Pineapple Salsa - Jet Stream Oven

Salsa: 3/4 cup fresh pineapple, crushed 1/2 cup minced onion 1/4 cup minced green bell pepper 3 cloves garlic, minced 1/2 cup fresh, chopped tomato 1 fresh jalapeno chili, seeded and finely chopped 1 tsp salt juice of 1 lemon
4 mahi-mahi (or salmon or shark) steaks 2 tsp olive oil
In small bowl, combine salsa ingredients. Set aside.
Lightly brush fish steaks with olive oil before cooking. Place fish on rack in preheated Nesco®/American Harvest® Jet Stream Oven® and broil at 400º F on HIGH fan speed for 8-10 minutes.
During last minute, top fish with salsa, add hold-down rack and finish cooking. |
