Gingerbread - 4, 5 or 6Qt. Roaster

1/2 cup butter or margarine
1/3 cup brown sugar, packed
1/4 cup dark molasses
1/2 tsp vanilla extract
2 large eggs
1/2 cup buttermilk
1&1/3 cup all-purpose flour
1/2 tsp baking soda
1 tsp ground ginger
1½ tsp pumpkin pie spice

Preheat Nesco® Roaster Oven to 350ºF.

Combine butter and sugar in medium mixing bowl; beat until light and
fluffy. Beat in eggs until fluffy, then add molasses and vanilla. Alternately
stir in dry ingredients and buttermilk. Spoon into lightly-greased 8" tube

Gingerbread - 4, 5 or 6Qt. Roaster


Set pan on rack in preheated cookwell. Cover and bake 40 to 45 minutes or
until wooden pick inserted in center comes out clean. Cool on cooling rack.
Serve warm with poached pears and apples.
