Home-style Beef & Cabbage Soup - Roaster or Slow Cooker

2 - 3 lbs beef short ribs
4 potatoes, peeled & cut in 1/2" cubes
1 onion, coarsely chopped
28 oz whole tomatoes
1 Tbsp sugar
1 tsp salt
1/2 tsp paprika
1/2 tsp pepper
5 cups water
1 small head cabbage, sliced in wedges 1/2" thick

Place ribs on rack in Nesco® Roaster Oven.

Cover and cook at 400ºF for 30 to 45 minutes, or until lightly browned. Carefully remove ribs and rack. Discard fat and drippings. Place ribs and all remaining ingredients, except cabbage, in roaster.

Cover and cook at 225ºF for 6 to 8 hours. Remove ribs from soup. Allow to cool slightly. Remove meat from bone; return meat to soup. Add cabbage wedges.

Add additional water if needed for desired consistency. Cover and continue to cook at 225ºF for 1 to 2 hours.

Serves 8 to 10

Note: Time and Temp will vary if using a Slow Cooker
