Vegetable-Lover's Delight - Jet Stream Oven

1 Tbsp peanut oil
1 to 3 cloves garlic, minced
2 tsp fresh ginger root, grated
1 small red onion, sliced
2 green or red peppers, seeded and sliced
1/4 pound green beans, sliced diagonally in 1" lengths
1 carrot, coarsely grated
3/4 pound (30 medium) mushrooms, sliced
1 small bunch bok choy or chard, chopped
1 zucchini, sliced
1/4 pound tofu, cubed
1½ tsp dried basil
1/2 tsp thyme
3 Tbsp parsley, minced
1 tsp lemon juice
3 Tbsp soy sauce

Preheat Nesco«/American Harvest« Jet Stream Oven« for 2 minutes at 400║ F with fan speed on high. Combine oil, garlic, ginger root, onion, peppers, beans, and carrot and place in liner pan. Stir-fry 3 to 5 minutes at 400║ F with high fan speed.

Add mushrooms, bok choy or chard, zucchini, tofu and herbs. Pour lemon juice and soy sauce over vegetables and cook on high 3 to 5 minutes at 400║ F.
