No-Peek Beef Stew - 4, 5 or 6Qt. Roaster
3 pounds beef stew meat, cubed
6 cups potatoes, cubed
4 cups carrots, sliced
4 medium onions, cubed
4 tsp salt
4 Tbsp tapioca, uncooked
2 Tbsp sugar
24 oz V-8® vegetable juice
Place meat and vegetables in large baking pan or cookwell. Mix V-8® juice, salt, tapioca and sugar in a bowl. Pour over meat and vegetables. Cover pan tightly with foil.
Bake in a 4 or 6 Quart Nesco® Roaster Oven at 275º F for 3 hours. Serve over corn bread.
