Patriotic Shortcakes - 12 or 18Qt. Roaster
2 cups all-purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/4 cup sugar
1/2 cup margarine, chilled, cut into pieces
2/3 cup plus 1 Tbsp milk
1 tsp lemon juice
1 tsp vanilla extract
whipped cream to serve
strawberries & blueberries to serve
Preheat Nesco® Roaster Oven to 425º F.
With your Nesco® Hand Blender Combine flour, baking powder, salt and sugar. Cut in margarine until mixture crumbles. Stir in milk, lemon juice and vanilla just until moistened.
Drop dough from a large spoon onto lightly greased 13 x 9 Baking Sheet. Place baking sheet on rack. Set rack in preheated cookwell. Cover; bake 20 to 25 minutes or until lightly browned.
Remove from baking sheet to cooling rack. Let cool; then slice to serve with whipped cream strawberries & blueberries.
