Fall Fruit Crumble - 12 or 18Qt. Roaster
cranberries, pears and apples form a sweetly irresistible autumn trinity beneath a crisp oat topping.
2 cups cranberries, fresh or thawed frozen
2 pears, firm-ripe, peeled and cut into 1/2" pieces
2 apples, peeled and cut into 1/2" pieces
1 cup sugar, divided
1½ Tbsp cornstarch
3/4 tsp pure vanilla extract
1 cup old-fashioned oatmeal, uncooked
1/2 cup all-purpose flour
1/4 tsp salt
1 stick butter, unsalted, softened
Preheat Nesco® Roaster Oven to 425º F.
Stir together fruits, 1/2 cup sugar, cornstarch and vanilla and place in a buttered shallow 2 qt baking dish, such as a 9 x 13" cake pan.
Stir together oats, flour, salt and remaining 1/2 cup sugar. Blend in butter with your fingertips until mixture forms small clumps. Scatter over fruit.
Place rack in oven and bake at 325º F until juices are bubbling, about 20 minutes. Cool slightly before serving.
