Leg of Lamb - Italian style - 12 or 18Qt. Roaster

8 lb leg of lamb
1/4 cup olive oil
1 Tbsp Italian herb seasoning
1 tsp rosemary
1 tsp lemon pepper
1 to 2 cloves garlic, minced

Preheat Nesco® Roaster Oven to 400º F.

Remove any silver-colored membrane and fat from lamb. Combine remaining ingredients in small bowl; whisk to blend. Brush over meat. Place lamb on rack in preheated cookwell.

Cover, set temperature at 325º F and roast 25 to 30 minutes per pound or until internal temperature reaches 175º F. on meat thermometer.
