Eggplant, Peppers and Lamb - 6, 12 or 18Qt. Roaster

2 lbs lamb, uncooked, cubed
1 medium eggplant, peeled, cubed
1 large red bell pepper, seeded cubed
1 large onion, cubed
8 small red potatoes, halved
1 oz envelope dry onion soup mix
1 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 tsp Italian herb seasoning
1/4 cup butter or margarine, softened
14½ oz can stewed tomatoes

Preheat Nesco® Roaster Oven to 325ºF.
Place lamb, eggplant, pepper, onion and potatoes in preheated cookwell; sprinkle with onion soup mix. Cover and bake for 30 minutes.

Combine bread crumbs, Parmesan cheese and seasoning in small bowl; stir until well mixed. Stir in butter.

Add tomatoes to meat in cookwell; stir. Sprinkle with crumb mixture. Cover and bake another 15 to 20 minutes or until heated through and top is bubbly.
