Glazed Sweet Potatoes - 4, 5 or 6Qt. Roaster

6 medium sweet potatoes, peeled, cut into 1" rounds
1 cup orange juice
8 oz can pineapple tidbits, drained, reserve juice
1/4 cup honey
1/4 cup brown sugar, packed
1½ Tbsp cornstarch
1 tsp pumpkin pie spice
1/4 cup pecan halves

Preheat Nesco® Roaster Oven to 350º F.

Arrange potato rounds in cookwell; add orange juice. Cover and cook 40 to 55 minutes or until tender. With turkey baster, remove orange juice. Cover cookwell.

Combine orange juice, pineapple juice and honey; stir to blend. Stir in brown sugar, cornstarch and spice until blended and smooth. Arrange pineapple tidbits and pecans over potatoes. Pour on juice mixture.

Cover and cook 20 to 30 minutes or until potatoes are glazed.

Serve 4 to 6
