Fish in Parchment - 12 or 18Qt. Roaster

4½ - 5 lb orange roughy fillets
2 - 3 Tbsp fresh parsley, chopped
2 tsp Italian herb seasonings
2 limes, cut into wedges
paprika to garnish
4 to 6 (14" x 16") pieces of parchment paper

Preheat Nesco® Roaster Oven to 350º F.

Set fish fillets on a dry surface. Sprinkle parsley and herbs over fish. Squeeze half the lime juice evenly over fish. Garnish to desired color with paprika. Divide fillets and place on parchment paper. Fold each up "butcher-wrap" style. Place packages on rack. Set rack in preheated cookwell.

Cover; bake 20 to 25 minutes. Remove packages to serving plates with a wide spatula. Cut a slit in top of package to serve.
