Pumpkin Pie - 12 or 18Qt. Roaster
1½ cups canned pumpkin
1/2 cup sugar
1 Tbsp all-purpose flour
1 Tbsp pumpkin pie spice
1 cup evaporated milk
9" pastry crust, unbaked
Preheat Nesco® Roaster Oven to 400ºF.
In large mixing bowl, combine pumpkin, sugar, flour and spice; stir until well mixed with your Nesco® Hand Blender. Add milk and eggs; stir until smooth.
Pat crust into your Nesco® 9" pie pan and flute edge. Pour filling into crust.
Place pie pan on rack. Set rack in preheated cookwell.
Cover; bake 55 to 60 minutes or until set.
