Apple-Stuffed Onions - 6Qt. Roaster
2 large Bermuda Onions
1 cup water
1 cup white wine
6 whole peppercorns
1 bay leaf
4 whole cloves
1 tsp mustard seed
1 tsp salt
3 Tbsp butter
1 tsp sugar
1 medium apple, cored & chopped
1/4 cup raisins
Put water, wine, peppercorns, cloves, bay leaf, mustard seed and salt into Nesco® Roaster Oven and preheat to 425º F [about 10 minutes].
When it reaches boiling, reduce heat to 300º F. Cut onions in half, horizontally. Peel and cut a thin slice off bottom of each half so onion stands flat. Remove centers leaving a 3/4" shell.
Place in roaster and simmer for 10 minutes at 300º F. In the meantime, melt butter in saucepan on top of range. Add sugar, nutmeg, apples and raisins. Stir until fruit is coated. With a slotted spoon, remove onions to individual large square of foil. Top with apple-raisin mixture and a little juice from onions. Wrap in foil. Discard liquid from cookwell. Replace rack and preheat to 400º F.
Place foil-wrapped onions in cookwell, cover and bake about 30 minutes.
