Sweet Potato Bake - 8 QT Slow Cooker

2 (29 oz) cans of sweet potatoes, drained
1/4 cup softened butter
1 Tbsp orange juice
2 Tbs white sugar
2½ Tbsp brown sugar
1/8 tsp salt
2 large eggs
1 tsp vanilla extract
1/2 cup milk

Topping Ingredients:
3/4 cup pecans, chopped
1/4 cup melted butter
1/4 cup flour
2/3 cup brown sugar
1 tsp vanilla extract

Spray cooking pot with cooking spray. Combine sweet potatoes, orange juice, butter, white sugar, brown sugar, and salt in the cooking pot of your Nesco® Slow Cooker.

In a small bowl, lightly beat eggs with a fork. Add vanilla extract and milk. Mix together and add to cooking pot and combine with previous ingredients.

Combine topping ingredients together in a small dish. Spread topping over mixture in cooking pot. Cover and cook on HIGH for 3-4 hours.
