Coconut Rice Pudding - Blender

1 cup water
2/3 cup medium-grain rice
1/4 tsp salt
2 eggs
1/2 cup sugar
14 oz can coconut milk
1 Tbsp lemon juice
1/3 cup golden raisins
1 cup coconut, sweetened, flaked

Bring water to a boil in saucepan; stir in rice and salt. Reduce heat to low; cover and cook 15 minutes or until all water is absorbed.

Meanwhile, heat oven to 325ºF. Whisk eggs and sugar in mixing cup of Nesco® Grip 'n Go Hand Blender. Whisk in coconut milk and lemon juice.

Spoon cooked rice into un-greased 8" square glass baking dish; sprinkle with raisins. Pour egg mixture over rice; stir to blend.

Bake 20 minutes. Stir well; sprinkle with coconut. Bake 15 to 20 minutes or until knife inserted halfway between center and edge comes out almost clean (mixture will be softly set). Serve warm.
