Pineapple Muffins - Jet Stream Oven

1 cup unbleached all-purpose flour
1 Tbsp baking powder
1½ Tbsp sugar
1 egg white
3/4 tsp vanilla extract
1/8 cup corn oil
10oz can crushed pineapple in natural juice, undrained

In large bowl, combine flour, baking powder and sugar; mix thoroughly with your Nesco®/American Harvest® Hand Blender.

In another large bowl, combine egg white, vanilla and oil; beat lightly with fork or wire whisk. Add crushed pineapple with its juice; mix thoroughly.

Add pineapple mixture to flour mixture; stir until well blended, being careful not to overmix batter.

Pour muffin batter into foil muffin cups and place on rack in Nesco®/American Harvest® Jet Stream Oven®. Cover with hold-down rack and bake at 350ºF on LOW fan speed for 9-12 minutes.
