Lemon Chicken - Jet Stream Oven

1 whole roasting chicken (3½-4 lbs), skinned
1 tsp grated lemon peel
1 tsp olive oil
1 Tbsp dried thyme
1 tsp dried sage, crushed
1/2 tsp black pepper
juice of 2 lemons
1 Tbsp minced fresh tarragon

Wash chicken an pat dry. Combine 1 Tbsp lemon juice, lemon peel, and oil; rub over chicken. Assemble Nesco®/American Harvest® Jet Stream Oven® with one expander ring.

Place chicken on rack and sprinkle with thyme, sage, pepper and tarragon. Put in preheated Jet Stream Oven® and bake at 400º F on HIGH fan speed. After 15 minutes of baking, pour lemon juice over chicken. Total baking time 30-35 minutes or until juices are clear.
