Beef Bourguignon - Roaster

6 strips bacon
3 lbs beef stew meat
2 Tbsp butter or margarine
1/4 cup flour, divided
1/2 tsp salt
1/4 tsp pepper
14½ oz beef broth, divided
1 onion, chopped
2 cloves garlic, minced
2 Tbsp ketsup
1/2 tsp thyme
1 bay leaf
2 cans (4 oz each) mushroom, sliced, drained
1/2 cup burgundy or red wine
hot cooked noodles

Fry bacon in large skillet until crisp. Remove bacon and drain but save drippings. Add beef to skillet and brown. Remove beef but save drippings.

Add butter to drippings and allow to melt. Stir 2 Tbsp flour, salt and pepper into butter mixture in skillet. Cook 1 minute, stirring to form a smooth paste. Gradually stir in one-half the broth, cooking and stirring until smooth and thickened.

Place beef in Nesco® Roaster Oven. Pour thickened sauce over beef. Cut crisp bacon in 1/2" pieces and add to beef with remaining broth. Add all remaining ingredients except reserved 2 Tbsp. flour and noodles. Blend well. Cover and cook at 225º F for 7 to 9 hours.

During last hour, blend remaining 2 Tbsp flour into 1/4 cup cold water. Stir into beef. Cover and continue cooking at 225º F until thickened. Serve over noodles.
