French Onion Soup - 6, 12 or 18Qt. Roaster
3/4 cup butter (1½ sticks)
10 cups yellow onion, thinly sliced
4½ tsp salt
1/3 cup flour
3 qts beef bouillon or brown stock*
1 cup brandy
* 3 qts beef bouillon can be made using 4 cups beef consomme and 5 cups water.
(consomme is thicker more condensed version of beef broth)
Preheat Nesco® Roaster Oven to 425ºF.
Melt half the butter and add enough onions to cover bottom of cookwell. Cook until softened stirring frequently.
As onions cook, add more until 5 cups have been cooked.
Add the other half of butter and continue adding remaining onions until all 10 cups are cooked.
Add salt and flour, stirring constantly to thicken.
Add bouillon and brandy. Stir well.
Reduce temperature to 400ºF.
Cover and cook 30 minutes.
Reduce heat to 350ºF and continue to cook 1 hour. Serve with Parmesan cCeese.
To slow Cook:
Follow directions above until all ingredients are mixed together. Reduce heat to 200ºF. Cover and slow cook 6 to 8 hours.
