Italian Lamb Roast - 4, 5, or 6Qt. Roaster
3 to 4 lb lamb, boneless shoulder roast
1/3 cup red wine vinegar
2 Tbsp olive oil
1 clove garlic, minced
1 Tbsp grated lemon peel
1/2 tsp rosemary
Preheat Nesco® Roaster Oven to 400ºF. Brush meat with vinegar, then brush with oil. Rub with garlic and seasonings. Place meat on rack.
Set rack in preheated cookwell. Cover; roast 10 minutes. Then reduce temperature to 325ºF and roast 1½ to 2 hours (20 to 25 minutes per lb) or until internal temperature reaches 160º F on meat thermometer.
