Country Stew with Dumplings - 12 or 18Qt. Roaster

6 lbs boneless pot roast cut into 1" pieces
1/4 cup butter

Preheat Nesco® Roaster Oven to 450ºF. Brown meat in cookwell 10 minutes in butter, stir after 5 minutes.

REDUCE HEAT to 325ºF - add:

20 small onions, halved
8 stalks celery, cut in 1/2" pieces
10 carrots, cut in 1/2" pieces
10 cups hot beef broth
1 clove garlic
1 Tbsp rosemary
1 tsp salt
1 Tbsp pepper

Cover and cook 1½ to 2 hours.

2 cups all-purpose flour
2 eggs
1/2 cup milk
dash salt
1/2 tsp pepper
1 Tbsp parsley

30 minutes before serving, mix dry ingredients together, stir in eggs and milk. Drop by spoonfuls into hot stew.

Leave uncovered for 10 minutes. Cover and cook for additional 20 minutes.

Serves 16 to 20
