Salmon in Parchment - 4, 5 or 6Qt. Roaster
1 to 1¼ lb salmon fillets
1 medium carrot, cut julienne
1 stalk celery, cut julienne style
2 (12 x 12") pieces parchment paper
1 lime, cut into wedges
2 tsp chopped parsley
Set rack in cookwell. Preheat Nesco® Roaster Oven to 350ºF.
Arrange fillets, carrots and celery in center of each parchment paper. Sprinkle with lime wedge and parsley. Fold each one butcher-wrap style. Place on rack, cover and bake 12-18 minutes or until fish flakes.
Remove packages with a wide spatula and place on serving plates. Cut a slit in top of package before serving.
