Zucchini Lasagna - 4 or 5Qt. Roaster
4 or 5 medium-sized zucchini
26 oz jar spaghetti sauce (any flavor)
Parmesan Cheese, grated
2 cups Mozzarella or Provolone Cheese, shredded
Wipe cookwell of 4 quart Nesco® Roaster Oven with cooking oil. Wash zucchini, cut off ends, slice 1/4" thick lengthwise.
Cover bottom of cookwell with sauce. Place one layer of zucchini (like lasagna noodles), sprinkle with Parmesan, then mozzarella. Continue layering zucchini and cheeses, ending with mozzarella.
Bake at 350º F for 20 minutes. Turn down to 250º F for 20 minutes. Insert knife through zucchini to test doneness.
When lasagna is done, turn down to 175º F to keep warm until ready to eat!
