Fish Boil - 6Qt. Roaster

1½ Tbsp lemon juice
1 bay leaf
1/3 cup dry white wine
4 whole peppercorns
2 whole Aalspice
dash salt
1 lb pkg frozen fish
2 to 3 cups Water [enough to cover fish]
6 small potatoes
6 small onions
1 cup frozen peas

Cheese Sauce
1 cup Poaching Liquid[see directions below]
2 Tbsp butter
2 Tbsp flour
1/4 cup milk
1/4 tsp dry mustard
2/3 cup Swiss or Cheddar Cheese, grated
dash nutmeg

Put all ingredients, except peas, into Nesco® Roaster Oven. Heat at 425ºF until mixture comes to boil [about 15 minutes].

Reduce heat to 350ºF and boil 30 minutes. Add peas and simmer about 5 more minutes. Remove fish and vegetables to warm platter and set aside in warm place OR you may serve it at this point.

To Prepare Cheese Sauce:
Pour poaching liquid from roaster into saucepan and cook on top of range until liquid is reduced to about 1 cup. Strain into a measuring cup and set aside. In same saucepan, melt butter and add flour, stirring constantly until bubbles form. Add poaching liquid, milk and mustard and cook until thick. Add grated cheese and nutmeg and stir until cheese is melted. Spoon over fish and vegetables.
