Vegetable Bake - 4, 5 or 6Qt. Roaster
2 Tbsp margarine
1 medium eggplant, peeled, cut into 1/2" slices (approx. 1 lb.)
2 medium zucchini, peeled, thick sliced (approx. 1 lb.)
2 large onions, peeled, sliced
2 large tomatoes, sliced
1 medium green pepper, seeded, cubed
1 tsp dill weed
1/2 tsp Italian herb seasoning
1/2 cup (2oz) grated Swiss Cheese
1/2 cup (2oz) grated Cheddar Cheese
salt and ground black pepper to taste
Preheat Nesco® Roaster Oven to 350º F.
Lightly wipe cookwell with cooking oil. Add margarine. Cover; cook until melted.
Layer vegetables in preheated cookwell. Sprinkle on seasonings and cheeses.
Cover; bake 30 to 35 minutes or until hot and bubbly.
Remove excess liquid from vegetables with baster, if desired.
Serves 4 to 6
