Rack of Lamb - 6, 12 or 18Qt. Roaster
3 to 4 lb rack of lamb
2-3 Tbsp light olive oil
1 tsp basil
1 tsp Italian herb seasoning
1/2 tsp lemon pepper
Preheat Nesco® Roaster Oven to 400º F.
Trim away layer of meat covering ends of bones to expose rib tips. Brush meat with oil; sprinkle with seasonings.
Place meat on rack and set in preheated cookwell. Cover; roast 18 to 20 minutes per lb. or until internal temperature reaches 165º F on meat thermometer.
Serves 4 to 6
