Fruit Stuffing - 6, 12 or 18Qt. Roaster
2 cups dried bread crumbs
1 cup wild rice, cooked
2 Tbsp butter
2 onions, chopped
2 stalks celery, sliced thin
1/2 tsp sage
1/4 tsp thyme
1/2 tsp marjoram
1/2 tsp lemon Pepper
15½ oz can pineapple tidbits, drained
11 oz can mandarin orange sections, drained
1 large apple
1/2 cup turkey drippings
Preheat Nesco® Roaster Oven to 350ºF.
Melt butter in fry pan at medium heat. Saute vegetables and herbs. Stir in bread crumbs and rice. Add fruit and turkey drippings. Spoon into 8" square pan. Bake at 350ºF for 1 hour.
To bake fruit stuffing and squash at same time, place squash in bottom of cookwell. Turn rack upside down. Place pan of dressing on rack to bake.
Spiced Acorn Squash
4 acorn squash, halved
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1 cup butter, melted
Preheat Nesco® Roaster Oven to 400ºF.
Scoop out seeds. Set in cookwell. Combine remaining ingredients, stir well. Pour even amounts into each squash. Cover and bake for 1 hour at 400ºF.
To serve: Fill squash halves with hot, cooked peas or baby carrots.
