Stuffed Boneless Pork Chops - 4, 5 or 6Qt. Roaster
4 (1½ lbs. each) boneless, center thick-cut pork chops
1 1/3 cups prepared stuffing
2 large baking apples, seeded, quartered
1/4 cup brown sugar, packed
1 tsp pumpkin pie spice
1/2 cup apple cider
1/2 cup beef broth
1 tsp rosemary
2 tsp butter or margarine
Remove cookwell; cover heatwell. Preheat Nesco® Roaster Oven to 350ºF.
Cut a pocket 3/4 of the way horizontally through pork chop. Stuff. Set in cookwell.
Toss apples with brown sugar and spice. Arrange around pork chops. Add apple cider, broth and rosemary. Dot butter evenly over pork chops.
Set cookwell in preheated heatwell. Cover and roast 40 to 50 minutes or until internal temperature of stuffing reaches 165ºF on meat thermometer.
To serve, place pork chops and apples on plate; pour pan juices over meat.
