Chili Con Queso - 4, 5 or 6Qt. Roaster

1 lb pork sausage (or substitute ground turkey to reduce calories and fat)
1 large onion, chopped
1 lb fresh mushrooms, cleaned and chopped
1 jalapeño pepper, finely chopped (optional)

Brown meat, mushrooms and pepper. Drain off any excess grease.

Then add:
8 oz can Picante® sauce and chili peppers
1/2 jar thick and chunky salsa
10 oz can Cream of Mushroom Soup
2 lbs Velveeta® cheese, cut into 1" cubes

In a preheated 4, 5 or 6 Quart Nesco® Roaster Oven, reduce heat to 200º F.

Cover. Stir until cheese melts into mixture. Be careful not to let cheese burn on sides of roaster.

Serve with tortilla chips and/or fresh vegetables.
