Zucchini Quick Bread - 12 or 18Qt. Roaster
2 cups plus 2 Tbsp all-purpose flour
1 cup granulated sugar
1 Tbsp wheat germ
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/2 tsp ground nutmeg
1/3 cup apple juice
1/3 cup vegetable oil
2 tsp vanilla extract
1½ cups zucchini, shredded
1/4 cup walnuts, chopped (optional)
Preheat Nesco® Roaster Oven to 375º F.
Combine dry ingredients; set aside; In large mixing bowl, combine eggs, juice, oil and vanilla. Stir until blended. Stir in dry ingredients alternately with zucchini. Add nuts; stir to blend. Pour into lightly greased 9 x 5" loaf pan. Place pan on rack. Set rack in preheated roaster oven. Cover; bake 55 to 60 minutes or until set.
Remove bread from pan; cool on cooling rack. Serve warm or cool completely and store in an airtight container.
Makes one loaf.
Note: If loaf is light on the bottom, set loaf back in pan, place pan sideways on rack and bake an additional 5 minutes.
